Click on Windows and choose Swatch Libraries. You will see all the various colour systems installed in Illustrator by default.

To load the colour system, simply click on it.

The colours will automatically load in its own library.

Choose Persistent to make this library appear each time.

To find a specific colour type in the colour code name and the colour will automatically appear.

How to keep a colour you have created?

Make sure you have selected Persistent. Then choose Add to Swatches.

To convert the colour to a spot colour, click on the little icon below in the colour palette.

To convert a colour to CMYK, click on the icon below also in the colour palette.
